That 70's Salad

Way back in the 1970's, when I was a mere slip of a girl learning to cook, one of my specialties was Chili Salad. We were reminiscing about the old days and I was inspired to make it again yesterday. We still think it tastes great!
CHILI SALAD
The Ingredients.
1 bag romaine
1 large tomato, chopped
1 avocado, cubed
Sliced ripe olives
Shredded cheddar cheese
Fritos
2 - 15 oz. cans HOT chili (I used Hormel chili)
Sour cream
The Directions.
Put romaine on dinner plates. Add heated chili. Sprinkle on cheese, tomatoes, avocados and sliced olives. Add Fritos around the edges and a dollop of sour cream in the middle. That's all there is to it. Not fancy but certainly easy and good on a hot summer night. I didn't have tomatoes or avocados or olives (oh no!), but it was still delicious! Adding the tomato and avocado will ramp up the healthy quotient immensely! Then you can enjoy those Fritos almost guilt-free! Serves 2-4.

  1. Yes! This is just like the salad at Wendy's that I loooove with hot chili on it. (I know, it's a fast food joint - guilty pleasure)
