Gourmet Grilled Cheese














Grilled Cheese Sandwiches

I just came across this recipe for grilled cheese sandwiches, using two kinds of shredded cheese, and decided to try it ASAP. The recipe makes a lot of filling, so you might want to cut it in half, or plan on feeding your entire neighborhood. The sandwiches are hearty, packed with cheesy goodness and go together in a snap.

Start by combining:
2 cups shredded cheddar
2 cups shredded mozzarella
5 oz softened (room temp) cream cheese
1 1/4 cups mayo
1/2 tsp garlic powder
This forms a nice, gooey, spreadable cheese mixture. Butter one side of bread (I used a good whole grain bread from Target). Spread the cheese mixture on the bread and top with the other slice of buttered bread. Cook on a griddle or in a frying pan until golden on both sides and cheese is melted, molten perfection.

Note: I think next time I make this recipe, I'll add sliced green onions and a dab of yellow mustard, for a little extra zing.
