Anybody brave enough to join "Meatless Monday?"

Have you heard about the website, meatlessmonday.com? I just pledged to eat meatless at least one day a week, on Mondays. There are several good reasons to join Meatless Monday. Going meatless may help reduce the risk of preventable conditions like cancer, cardiovascular disease, diabetes and obesity. It can also help reduce your carbon footprint and save valuable resources like fresh water and fossil fuel. But keep in mind that just going meatless isn't enough. That’s why they give you the information you need to add healthy, tasty meat-free alternatives to your diet each week.

I think Meatless Monday is a fantastic idea! We actually eat a lot of meatless meals at our house, so I already know we won't be depriving ourselves in any way. And there are countless great meatless recipes out there. If you're interested, you can register to join the movement here: http://www.meatlessmonday.com/join-the-movement/

For our first Meatless Monday meal, I went with my old standby, whole wheat pasta with a great meatless tomato and mushroom sauce. You can find the recipe here.
