Do you fondue?

















Our family loves Cheese Fondue. We've been "fonduing" since the kids were small. This casual, informal meal is fun and festive and gets everyone at the table involved and interacting. The recipe is the same one I've been using for almost 40 years. I don't remember where I got it but it's really excellent.
CHEESE FONDUE
2 cloves garlic, crushed
2# Swiss cheese, cubed
2 T. flour
1-1/2 cups white wine (Chenin Blanc)
1 T. lemon juice
dash black pepper
dash nutmeg
1 tsp. tarragon
1 T. parsley flakes
Dippers:
French bread cut so that each piece has a crust, sausage chunks, broccoli flowerets, green apple slices
Toss cheese with flour. Pour wine into pot over low heat. Do not allow wine to boil. When small bubbles appear on bottom, add lemon juice. Gradually add handfuls of cheese stirring constantly after each addition with wooden spoon in figure 8 motion. Add spices. Continue to stir. This can burn on the bottom if the heat is too high. Serve hot with French bread, sausage, etc. using long handled fondue forks. A tossed salad makes a perfect accompaniment.
