Mmmm ... Lemon Bars!















Sorry for the patchy posting. I haven't been around much lately. I've been busy getting the house in order for son Tom's visit home to Minnesota. I thought I'd make a pan of Lemon Bars to have in the freezer. Even though almost everyone makes them, they're still one of my favorites, and Tom's. Their sweet lemony flavor just can't be beat. I've got a similar recipe that calls for lime juice instead of lemon juice.

LEMON BARS
1 cup flour
1/2 cup butter
1/4 cup powdered sugar
2 eggs
1 cup sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 Tbsp. lemon juice
Heat oven to 350 degrees. Blend flour, butter and powdered sugar thoroughly (I use my fingers for this job). Press evenly in 8x8 or 9x9 pan. Bake 18-20 minutes. Beat the remaining ingredients together. Pour over the crust and bake 20-25 minutes more. Do not over bake. The filling will puff up while baking but flattens when cooled. Allow to cool before cutting. Sprinkle cooled bars with powdered sugar.
