Pizza recipe from Martha ...














Just got this recipe from my daughter. We experimented and made some of these tasty little pizzas for lunch the other day. This was fast and low-cal. It's from Martha Stewart's EveryDay Living.
Thinnest Crust Pizza with Ricotta and Mushroom
Serves 2
2 teaspoons olive oil
2 whole-wheat sandwich wraps (12-inch)
2 ounces Asiago cheese, shredded (1 cup)
2/3 cup part-skim ricotta
1 package mushrooms, trimmed and thinly sliced
1 small red onion, halved and thinly sliced
Chopped fresh parsley or fresh basil
Coarse salt and ground pepper
1. Preheat oven to 425°. For easy cleanup, line baking sheet with foil. Brush both sides of wrap with oil. Place wraps on baking sheet.
2. Sprinkle wraps with Asiago, then dollop with ricotta. Sprinkle with mushrooms and red onion, parsley or basil; season with salt and pepper.
3. Bake pizzas until crust is crisp and very brown all over, about 10 minutes, rotating sheets from front to back during baking. Cut with a pizza cutter or knife.

NOTE: You could also add cherry tomatoes, artichokes, broccoli, black and green olives ... the combination for toppings is endless.

  3. OMG, that looks fantabulous! (okay, so that's not really a word) But yea, hold the onions and add anchovies and I'm in heaven!
