Pork chops ... with coca-cola???

While searching the web recently, I found this recipe for pork chops simmered in a sauce of coke and ketchup. I never thought of using Coke with pork chops but it sounded easy, so I tried it. I added the sliced onions and decided to use half ketchup and half tangy barbecue sauce I had on hand. We all loved it. I served this with red beans and rice. Crusty bread is mandatory!
COCA-COLA PORK CHOPS
6 Boneless pork chops, browned in skillet
Salt & pepper to taste
1 cup ketchup (I used half ketchup and half barbecue sauce)
1 cup Coke
1 large onion, thinly sliced
Season the chops with salt & pepper. Brown in a skillet. Mix the ketchup and Coke and pour over chops in a casserole. I sliced an onion and put the slices on top. Cover with aluminum foil and bake at 375°F for about 45 minutes. Delicious and tender! Serve over rice.

  2. Years ago, a beautiful old doctoe, the first black surgeon to graduate from Harvard told me about the two foods that promote and help to retain a youthful appearance: one is garlic, the other pork!!

  3. It sounds interesting. I've seen several recipes recently that call for cooking with soft drinks. I've never done this and wonder if diet soda would ruin the dish or not?

  4. I don't know what diet soda would do, Moggy ... but the regular Coke is great!
