No-crust quiche ... you won't even miss it!














Went to brunch at my daughter's today. She made the most amazing quiche! Part of the appeal of this is that it doesn't have a crust (all those extra calories) and you really don't miss it. And I love the way she decorated the top with asparagus spears. She served the quiche with a salad of mixed field greens and a vinaigrette dressing ... and muffins from Bread & Chocolate.
CRUSTLESS QUICHE
4 eggs
3 T. whipping cream (or milk)
2 T. water
Whisk the above ingredients together. Spray corning or glass pie pan
with Pam and pour mixture into pan.
Add:
3 slices cooked bacon, crumbled
1 cup finely shredded cheddar cheese
3 cooked asparagus spears, cut into 1-inch pieces - optional
chopped green onion - optional or minced onion flakes
Bake for 30 minutes at 375 degrees.
