I love a good chicken recipe, something that tastes good and is easy to prepare. I found this one on Pinterest and it really fits the bill. And it makes yummy leftovers the next day. My advice: you really should give it a try soon!
Parmesan Baked Chicken
The Ingredients.
6 boneless, skinless chicken breasts
1-1/2 cup light mayonnaise or Greek yogurt (or half of each)
1/2 cup fresh Parmesan cheese, plus more for the top
1-1/2 tsp. seasoned salt
1/2 tsp. pepper
1 tsp. garlic powder
The Directions.
Preheat oven to 375 degrees and spray the inside of a 9x13 glass pan. Wash chicken under cold, running water and pat dry. Place chicken in pan and lightly season with seasoned salt and pepper.
Mix together the mayo, Parmesan cheese, garlic powder and a little seasoned salt and pepper, blending well, and spread evenly over each
piece of chicken. Be sure to cover the exposed chicken so it
doesn't dry out. Sprinkle a bit more fresh Parmesan over the top. I also added a few sprigs of fresh Rosemary.
Bake uncovered for 45 minutes. Chicken will be moist, fork-tender and delicious. From food.com.

Pinning on Pinterest!
Are you on Pinterest? It's one of my favorite new pastimes ... for when I'm feeling extra lazy! It's very relaxing, like browsing through a couple of really great magazines. I can check out all kinds of cool decorating ideas, find delicious new recipes and handy gardening tips, all from the comfort of my own little computer. But the best part is that I come away from my "Pinterest experience" feeling renewed and energized!

I've been hearing about Pinterest for a while now but I didn't officially join until last week. I've been trying to explain it to my husband. I'm pretty sure he doesn't get what it is about Pinterest that appeals to me. But then, I spend a lot more quality time on the computer than he does!

Some of you may be asking, "What is this thing called Pinterest?"
Well, you know when you're online and see something you love and don't want to forget? Do you email it to yourself? Do you print it and stick it in a shoe box? Or maybe bookmark it on your computer? Now there's a way to compile all the neat things you find online in one handy spot -- on Pinterest!

Pinterest is a website that lets you "pin" things online, like you'd pin them on a real life bulletin board. But instead, Pinterest saves all the things you like on your own virtual bulletin boards so you can easily access them. Plus, you can follow friends on Pinterest and "repin" things they have already pinned, on your own Pinterest boards. It's a great place to go when you're searching for inspiration.

According to the tracking firm Hitwise, Pinterest became one of the Web's Top 10 social networks in December. Pinterest does have a waiting list to join, so try to find a friend who will send you an invitation.
