Garbanzo Bean Salad















GARBANZO BEANS
Garbanzo Beans, or chickpeas as they are also called, are the most widely consumed legume in the world. Originating in the Middle East, they have a firm texture with a flavor somewhere between chestnuts and walnuts. Garbanzo beans are usually pale yellow in color. These hearty beans are rich in carbohydrates, proteins, phosphorus, calcium and iron.

This is one of my favorite lunches. I make it so often I don't need a recipe. I'm sure you've seen it featured here on my blog in the past. But it's worth taking another look. :)

Garbanzo Bean Salad
Ingredients:
1 can garbanzo beans, rinsed and drained
1 box cherry tomatoes, halved
Thinly sliced onion
2 oz. Crumbled low-fat feta cheese
Dressing:
2 Tbsp. EVOO (extra-virgin olive oil)
2 Tbsp. Balsamic vinegar
1/2 tsp. dried oregano
1/4 tsp. black pepper
Place garbanzo beans, tomatoes, onion, and feta in a bowl. Combine dressing ingredients in a jar and shake well. Pour over the bean mixture and toss. Refrigerate before serving so flavors can meld.

I add pitted Kalamata olives if I have them.

  1. Delicious! You are so right garbanzos have the taste and texture of chestnuts, especially when they're warm. Yummy!
