Buttery Lemon Squares ...














LEMON SQUARES

Everyone seems to make this recipe but they always remind me of my son, Tom. They were his favorite when he was a little boy.
1 cup flour
1/2 cup butter
1/4 cup powdered sugar
2 eggs
1 cup sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 Tbsp. lemon juice
Heat oven to 350 degrees. Blend flour, butter and powdered sugar thoroughly (I use my fingers for this job). Press evenly in 8x8 or 9x9 pan. Bake 20 minutes. Beat the remaining ingredients together. Pour over the crust and bake 20-25 minutes more. Do not over bake. The filling will puff up while baking but flattens when cooled. Allow to cool before cutting. Sprinkle cooled bars with powdered sugar.
