Tangy Coleslaw ...














We had a celebration dinner tonight. Our daughter had a 20 week ultrasound this morning and she and her husband found out the sex of their baby! They invited us for dinner to share the great news.
I brought this salad; it was a huge hit with everyone, especially my husband (Grandpa). Katie served it with grilled chicken and cornbread muffins ... perfection!
You should definitely make this salad ... you'll love it!

TANGY COLESLAW WITH DRIED CRANBERRIES AND WALNUTS
Serves 4
If possible, prepare this coleslaw ahead of time and refrigerate it for a few hours before serving to let the flavors come together.
Ingredients:
1/2 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon sugar
Salt to taste
1 (10-ounce) package shredded cabbage coleslaw mix
6-8 green onions, thinly sliced
1/2 cup dried cranberries
1/4 cup chopped walnuts
Method:
In a small bowl, whisk together mayonnaise, lemon juice, sugar, salt and 2 tablespoons water. Add cabbage mix, carrots, green onions, cranberries and walnuts and toss well to coat.
