Orange and Onion Salad














My husband loves this salad ... I think it's because of the onions! I love the combination; the tartness of the oranges cuts the zip of the onion.

FRESH ORANGE AND ONION SALAD
4 large oranges, peeled with white membrane removed
1 red onion, thinly sliced, separated into rings
3 Tbsp. olive oil
3 Tbsp. vinegar
1/2 tsp. dried oregano
1/4 tsp. pepper
Crumbled Bleu cheese
Thinly slice oranges crosswise. Combine with sliced onion. Combine oil, vinegar, oregano and pepper in a jar and shake. Pour over oranges and onions. Add crumbled bleu cheese. Cover and refrigerate at least 1 hour. This can be arranged on lettuce leaves to serve. Makes 6 servings.

    Unfortunatley raw onions are one of the very few things on earth that I don't care for though.
