OMG ... BAB!


















Oh my gosh, these sandwiches were amazing. Bacon, apple and Brie snuggled between slices of hearty Artisan bread and grilled to gooey perfection. I made them for supper recently and they were a huge hit.

GRILLED BACON, APPLE AND BRIE SANDWICHES
I used Italian bread for the sandwiches. Sourdough would be good, too, or any hearty, crusty bread. To make 4 sandwiches, you will need:
8 Slices bread
Whole grain Dijon mustard
Brie cheese, thinly sliced, about 12 slices
Applewood smoked bacon, cooked, about 12 slices
1 large Honey Crisp apple, sliced thin

Butter one side of each slice of bread. Spread mustard on the unbuttered side of bread. Place 3 slices Brie on top of mustard, add bacon and apple slices. Top with second slice of bread and grill over low to medium heat until cheese is melted and bread is golden brown. The hardest part of making these yummy sandwiches was flipping them so the filling didn't fall out!

Mmmm ... Egg Salad BLT's


















As promised, here's a great little recipe for a different twist on two old stand-bys: the ever popular bacon-lettuce-tomato sandwich paired with the egg salad sandwich. They go together better than peanut butter and jelly!
Egg Salad BLT's
Yield: 4 servings (serving size: 1 sandwich)
1/4 cup fat-free mayonnaise
3 tablespoons reduced-fat sour cream (didn't have any to add today)
2 teaspoons whole-grain Dijon mustard
3 tablespoons thinly sliced green onions
Celery, diced
Chopped fresh parsley
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated lemon rind
8 hard-cooked large eggs
8 slices peasant bread or firm sandwich bread, toasted
4 bacon slices, cooked and cut in half crosswise
8 (1/4-inch-thick) slices tomato (I was out of tomatoes so I served a few cherry tomatoes on the side)
4 large Boston lettuce leaves

Combine first 8 ingredients in a medium bowl, stirring well. Coarsely chop eggs. Add eggs to mayonnaise mixture; stir gently to combine.

Arrange 4 bread slices on a cutting board or work surface. Top each bread slice with 1/2 cup egg mixture, 2 bacon pieces, 2 tomato slices, 1 lettuce leaf, and 1 bread slice. Serve sandwich immediately. I served these sandwiches with jalapeno-cheddar Kettle chips. Husband Tom can't eat a sandwich without chips!

Not your average turkey sandwich!


















TURKEY SANDWICH ON SOURDOUGH
Try this for an easy and tasty lunch or supper. I found a wonderful sliced cranberry-orange turkey breast at Target's deli. I toasted sourdough bread, added a dab of mayo, sliced swiss cheese, the turkey and a few spoonfuls of whole berry cranberry sauce for a really delicious sandwich. Add some chips and fruit and you're good to go!

The Ultimate Tuna Sandwich ...














~Tuna Sandwiches with Red Grapes and Green Olives~
Katie came for lunch today. She's passed the half way mark in her pregnancy and tells me she needs to eat a lot of protein right now. I made tuna sandwiches, starting with light tuna packed in water and well-drained, a little mayo, some sliced green olives, seedless red grapes, walnuts, fresh basil and lots of pepper! I mixed it altogether and served it on toasted 12-grain bread. She gave it her thumb's-up!
