It's the Berries!













TennTucky Berry Cobbler
Recipe from Southern Living
Serves: 4
The Ingredients.
1 1/4 cups sugar
1 cup self-rising flour
1 cup milk
1/2 cup butter, melted
2 cups fresh or frozen blackberries (I used frozen mixed berries and it was great!)
Vanilla ice cream (optional!)
The Directions.
1. Whisk together 1 cup sugar, flour, and milk just until blended; whisk in melted butter. Pour batter into a lightly greased 9- x 9-inch baking dish; sprinkle berries and remaining 1/4 cup sugar evenly over batter.
2. Bake at 350° for 1 hour or until golden brown and bubbly.
The Verdict.
Cobblers are one of my favorite down-home, comfort desserts. This is a FABULOUS cobbler and, with the self-rising flour, you won't believe how fast it goes together. You can use fresh or frozen berries. Double the recipe for a 9x13 pan. It can be quite sweet with good berries, so feel free to cut back on the sugar. It's easy and delicious, especially served warm with a scoop of vanilla ice cream. Do not forget the ice cream! :)
