We had dinner at our daughter and son-in-law's last Sunday. The food was amazing. My daughter is a much better cook than I am, but she had a good teacher (me!). They served green beans and red potatoes from the Farmer's Market, at the peak of freshness and flavor, a tossed salad with juicy Farmer's Market tomatoes and grilled chicken. My contribution was small. I brought Lemon Barbecue Sauce for the chicken. What a magnificent feast.
Lemon Barbecue Sauce For Chicken
1 clove garlic, crushed
1/2 tsp. pepper
1/2 tsp. salt
1/2 tsp. dried thyme
1/4 cup salad oil
1/2 cup lemon juice
2 Tbsp. grated fresh onion (or dried onion in jar)
Combine ingredients in a jar with tight fitting lid. Shake well. May be used to marinate chicken before grilling or brushed over chicken after grilling.
Katie's Garlic Roasted Potatoes
Cut red potatoes into bite-sized chunks. Leave skin on.
Drizzle with olive oil.
Add sea salt and pepper to taste.
Add 6-7 cloves garlic.
Roast in oven at 425˚ for one hour, stirring occasionally.
